Masahiro from Uchu Brewing visited us in Sande during the Stevnsbær cherry harvest in 2023, and we dreamed up this blend together while hand-sorting cherries the whole day.

Haskap, also called honeyberries, looks like elongated blueberries, and packs a unique flavor of sweet blueberries, blackberries, raspberries and black currants. Its color and acidity are truly off the charts!

The fruit is native to northern Japan, and has quite recently been approved for planting in Europe. What better fruit to pair with the Stevnsbær cherries that Masahiro helped us harvest!

Barrel origin:
Stagg Jr. and Woodford Reserve bourbon barrels (a total of 12 months of aging)

Honey variety:
A complex blend of wildflower honey from Konnerud and Løten. Paired with some forest honey from Lillesand.

Three haskap varieties from Lier - all organic

Boreal Beast (22%)
