How could we not use Frederiksdal cherries when doing a fruit-forward collaboration with them. A long time ago I was introduced to the unique cherry variety "Stevns" after trying the legendary SpontanCherry Frederiksdal from Mikkeller. That further got me into Frederiksdal's extraordinary wines, and guess my surprise when I found out I could get the same variety in my neighbouring town.
Over ten years later I received 500 kg of frozen cherries from Frederiksdal, and it feels like coming full circle doing a mead with both cherries together!
A two-week long maceration gave loads of soft, supple tannins and color, and only free-run juice was collected. As a cherry on top, the Norwegian cherry part was cryo-concentrated.
It's a cherry bomb without a doubt. But the forest honey shines through beautifully and puts its marks on the mead with sweet notes of dark caramel and chocolate. While still retaining a lot of acidity!
